Chocolate and Grana Padano creams

Believe it or not, the unmistakable saltiness of Grana Padano is the perfect partner to sweet and creamy white chocolate. Surprise and delight your guests with this dessert - they’ll never guess what the secret ingredient is.


250 g white chocolate, finely chopped
50 g Grana Padano, finely grated
150 ml double cream
75 ml whole milk
3 large free-range egg yolks


Add the chocolate and Grana Padano to a large mixing bowl and place the egg yolks in a separate mixing bowl.
Warm the cream and milk over a medium-low heat until just about to simmer. 
Whisking constantly, stream the cream and milk into the egg yolks, then pour back into the pan. Cook over a low heat for 2 minutes, stirring constantly with a rubber spatula, or until thickened. 
Using a sieve, strain the custard over the chocolate and Grana Padano. Leave to stand for 2 minutes. 
Whisk the chocolate mixture together until it’s glossy and everything is glossily combined. 
Strain the mix again into a jug, then divide evenly between six small glasses or ramekins.
Cover the surface of each cream with a small piece of clingfilm. This is to stop a skin forming. Leave in the fridge to chill for 3 hours, then serve with biscuits of your choice.
