Cod Burger, Spinach and Grana Padano in Soft Sesame Seed Buns
Ingredients400 g cod fillet
250 g fresh spinach
50 g Grana Padano
50 g breadcrumbs
4 soft sesame seed buns
100 g beetroot (cooked)
1 garlic clove
Mixed salad leaves
Extra virgin olive oil
Salt & pepper
PreparationSauté the spinach in a non-stick pan with a drizzle of olive oil and a clove of garlic.
In a blender, combine the cooked spinach, pieces of cod, grated Grana Padano, breadcrumbs, lemon peel, and a sprig of parsley. Blitz until you obtain a soft and compact mixture.
Shape 4 burgers with the help of a pastry-cutter and cook for 3-4 minutes on each side in a non-stick pan with a drizzle of olive oil.
Allow to cool briefly and serve the burgers with soft sesame seed buns, mustard, salad, and sliced beetroot.
