    Brown rice salad with peas, tomatoes, hard-boiled eggs, green olives, corn, basil and Grana Padano PDO

    Ingredients

    240 g brown rice
    150 g Grana Padano PDO
    100 g fresh peas
    200 g grape tomatoes
    75 g corn
    4 hard-boiled eggs
    80 g pitted green olives
    1 bunch basil
    extra virgin olive oil
    salt
    pepper

    Preparation

    STEP 1

    Boil the rice in plenty of salted water and, when cooked, drain and rinse under cold water to cool.

     

    STEP 2

    Transfer the rice to a large mixing bowl, add the peas, corn, tomatoes cut in quarters, olives, basil leaves, hard-boiled eggs cut in quarters and cubed Grana Padano PDO, and mix well.

    STEP 3

    Season with salt and pepper to taste, dress with a drizzle of extra virgin olive oil and serve the rice salad cold.
