    Paccheri with Grana Padano, pepper and artichokes

    320 g paccheri (big-shaped pasta)
    4 artichokes
    100 g Grana Padano
    1 lemon
    1 garlic clove
    extra virgin olive oil


    STEP 1

    Clean the artichokes and cut them in half, removing the choke in the centre. Cut into small strips and put in a bowl with water and lemon juice.

    STEP 2

    Lightly brown a clove of garlic in a large non-stick pan with a drizzle of olive oil, add the drained artichokes and stir fry for 4 to 5 minutes, adding salt and pepper to taste.
    Cook the pasta in lots of salted water, set aside ½ glass of cooking water and drain the pasta when al dente.

    STEP 3

    Add the paccheri to the pan with the artichokes, add the cooking water and cook for 1 minute on a high heat.

    STEP 4

    Turn the heat off, add some grated Grana Padano, stir well and serve the pasta immediately.
