Tasty potato patties

For 25-30 potato patties
30 g fresh breadcrumbs
1 sprig of rosemary                
60 g grated Grana Padano
300 g mashed boiled potatoes
3 eggs
Extra virgin olive oil
Salt to taste
Pinch of nutmeg
Rosemary for garnishing
Heat the oven to 180°C.
Blend the breadcrumbs with some rosemary. Transfer to a bowl.
Add the Grana Padano, the potatoes, the whole egg and an egg yolk. Season and add the grated nutmeg. Mix briefly to combine the ingredients into a soft mixture. If necessary, add another egg yolk.
Prepare the potato patties with well-oiled hands. Arrange in the baking dish lined with baking paper and bake in a hot oven for about 20 minutes.
Before serving, garnish the potato balls with little sprigs of rosemary.
