    Cous cous with tuscan kale crisps, red onion, Grana Padano, chicken and pumpkin

    • 150 g Grana Padano
    • 200 g couscous
    • 1 bunch of Tuscan kale leaves
    • 1 large red onion
    • 200 g chicken
    • 300 g pumpkin
    • 1 garlic clove
    • extra virgin olive oil
    • salt
    • pepper
    • 1 sprig of parsley


    STEP 1

    Prepare the couscous following the instructions on the package.
    Wash the kale and remove the stalks. Cut into strips and place on a baking tray. Dress with a drizzle of olive oil, salt and pepper, and bake in a preheated oven at 180 °C for 10 minutes.

    STEP 2

    Clean the onion, cut into slices, and grill them on both sides. Add salt and pepper to taste.
    In a pan, heat a drizzle of extra virgin olive oil with a clove of garlic, add the diced pumpkin and cook for 10 minutes. Add the diced chicken and cook for 10 more minutes. Season with salt and pepper.

    STEP 3

    Fluff the couscous and add it to the bowl, together with Grana Padano shavings, vegetables, and chopped parsley. Drizzle some extra virgin olive oil and mix well.
