    Bread and herbs croquettes with Grana Padano spicy sauce

    • 500 g stale bread
    • 50 g Grana Padano
    • 2 eggs
    • 250 ml milk
    • breadcrumbs
    • 1 sprig of parsley
    • Salt
    • Pepper
    • Oil for frying

    • For the spicy sauce:
    • 230 g Grana Padano
    • 280 g fresh cream
    • 1 tsp chili pepper


    STEP 1

    Cut the bread and put it in a bowl. Pour the milk over it and leave it to soften. Use a fork to break down the bread, add one egg, the chopped parsley and the grated Grana Padano. Add salt and pepper and mix well.

    STEP 2

    Take a spoonful of mixture and make a ball. Squash the ball slightly and roll it in the beaten egg, then in the breadcrumbs. Repeat until you finish the bread mix.
    Fry the croquettes in plenty of boiling oil until golden. Add salt to taste.

    STEP 3

    To make the spicy sauce, in a small saucepan heat the fresh cream and the chili pepper on medium heat and add the grated Grana Padano. Mix well and remove from the heat.
    Serve the bread croquettes with the spicy Grana Padano sauce.
