Small puff pastry pizzas with red and yellow grape tomatoes, capers and Grana Padano
Ingredients1 puff pastry, ready rolled
100 g red grape tomatoes
100 g yellow grape tomatoes
80 g Grana Padano
Capers in vinegar
Extra virgin olive oil
Salt & pepper
PreparationUnroll the puff pastry and use a pastry ring to cut out discs with an 8-9 cm diameter.
Place the discs on a baking tray lined with parchment paper, brush them with the beaten egg and pierce the centre with a fork.
In the centre of each disc, put a teaspoon of grated Grana Padano, a few capers and halved tomatoes, oregano, salt, pepper, and dust with Grana Padano.
Drizzle with olive oil and bake in a preheated oven at 200°C for 10-15 minutes, until the little pizzas are golden.
Serve the pizzas warm decorated with Grana Padano shavings.
