Hard-boiled Eggs Filled with Grana Padano and Herb Mousse

Ingredients8 hard-boiled eggs
100 g Grana Padano
fresh herbs (thyme, marjoram, chives...)
extra virgin olive oil
1 tablespoon Greek yoghurt
salt & pepper
PreparationCarefully peel the hard-boiled eggs, cut in half lengthwise and remove the yolks.
In a mixer, beat the egg yolks with the grated Grana Padano, Greek yoghurt, a drizzle of olive oil, some fresh herbs and a pinch of turmeric; season with salt and pepper to taste.
Blend everything until the mixture is smooth and even.
Fill the eggs with the mixture, using a spoon or a piping bag.
Serve the eggs cold, garnished with fresh thyme leaves.
