Anchovy and Potato Pies with Grana Padano
Ingredients500 g anchovies, cleaned
500 g potatoes
100 g Grana Padano
extra virgin olive oil
1 garlic clove
salt & pepper
PreparationBoil and peel the potatoes, then mash them with a potato masher.
In a bowl, mix the mashed potatoes with the grated Grana Padano, 1 egg, chopped parsley and chopped garlic, seasoning with salt and pepper to taste. Mix well until soft and evenly combined.
Grease 4 aluminium moulds and sprinkle with breadcrumbs, line the moulds with anchovy fillets and fill with the potato and cheese mixture.
Bake in a preheated oven at 200 °C for 20 minutes.
Unmould the pies once they have cooled and serve immediately.
