Chickpea Salad with Grana Padano
Ingredients300 g precooked chickpeas
100 g Grana Padano shavings
1 head lamb’s lettuce
4 large red onions
150 g water
50 ml vinegar
3 tablespoons cane sugar
extra virgin olive oil
salt & pepper
PreparationThinly slice the onions and brown in a non-stick pan with a drizzle of extra virgin olive oil.
Mix water, vinegar and cane sugar in a bowl and pour into the pan with the onions, continuing to cook them on low for 10-15 minutes.
In a bowl, mix the lettuce with the chickpeas and cooled onions. Season with olive oil, salt, pepper and shavings of Grana Padano.
