    Chickpea Salad with Grana Padano

    • 300 g precooked chickpeas,
    • 100 g Grana Padano shavings,
    • 1 head lamb’s lettuce,
    • 4 large red onions,
    • 150 g water,
    • 50 ml vinegar,
    • 3 tablespoons cane sugar,
    • extra virgin olive oil,
    • salt & pepper.


      STEP 1

      Thinly slice the onions and brown in a non-stick pan with a drizzle of extra virgin olive oil.


      STEP 2

      Mix water, vinegar and cane sugar in a bowl and pour into the pan with the onions, continuing to cook them on low for 10-15 minutes.


      STEP 3

      In a bowl, mix the lettuce with the chickpeas and cooled onions. Season with olive oil, salt, pepper and shavings of Grana Padano.
