Baked avocado stuffed with egg, salmon and Grana Padano
100 g Grana Padano
200 g smoked salmon
200 g baby spinach
1 bunch chives
Extra virgin olive oil
Salt& & pepper
PreparationHalve the avocados and remove the stone with a knife.
Scoop a bit of flesh out of the centre of each avocado to create a well. Put the avocado halves on a baking tray lined with parchment paper and crack an egg into each well.
Sprinkle the Grana Padano on top, season with a pinch of salt and pepper, and drizzle with of olive oil. Bake in a preheated oven at 180 °C for 10-15 minutes.
Serve the warm avocados garnished with Grana Padano shavings and chopped chives, accompanied by smoked salmon and fresh baby spinach.
