    Basmati rice burger with chunks of lemon chicken, mixed leaf salad and Grana Padano Riserva shavings

    • 300 g Basmati rice
    • 100 g Grana Padano Riserva
    • 500 g chicken chunks
    • 1 lime
    • 30 g black sesame seeds
    • mixed leaf salad
    • basil
    • extra virgin olive oil
    • salt & pepper


    STEP 1

    Rinse the Basmati rice in a sieve under running water, then drain well.
    Cook the Basmati rice in a pot with 600 g water, bring to the boil and cook on a low heat with the lid on for 10 minutes.

    STEP 2

    When cooked, pour into a bowl, add a drizzle of olive oil, the black sesame seeds and some finely grated Grana Padano Riserva.

    STEP 3

    When cooled, shape the burgers with the aid of a dough cutter and leave aside on a tray lined with parchment paper.

    STEP 4

    Heat a drizzle of olive oil in a non-stick pan and cook the chicken chunks until golden brown. When cooked, add the lime juice, a pinch of salt and some pepper.

    STEP 5

    First lay out the burgers on a plate, then add the mixed leaf salad, chicken chunks, Grana Padano shavings and garnish with a few basil leaves before serving.
