    Green Beans, Speck, Hazelnut and Grana Padano Riserva Plum Cake

    Ingredients

    500g potatoes
    100 g Grana Padano PDO Riserva
    400 g green beans
    2 eggs
    80 g speck
    50 g hazelnuts
    milk
    breadcrumbs
    extra virgin olive oil
    salt
    pepper

    Preparation

     

    STEP 1

    Boil the potatoes in plenty of salted water; drain them and immediately peel and mash.
    Parboil the green beans for a few minutes, then rinse under running water to cool and maintain their colour.

    STEP 2

    In a bowl, combine the mashed potatoes with the eggs and grated Grana Padano Riserva, adding a little milk to make it creamy, until the mixture is well blended.
    Add the green beans, hazelnuts, thin strips of speck and a drizzle of extra virgin olive oil and mix well, seasoning with salt and pepper to taste.

    STEP 3

    Grease a plum cake mould and dust with breadcrumbs; pour in the mixture, levelling it with a spoon.

    STEP 4

    Bake in a preheated oven at 180°C for 40-45 minutes.
    Serve the pie warm, garnished with fresh herbs.
