    Baked Courgettes Filled with Grana Padano Riserva

    • 4-6 courgettes
    • 150 g Grana Padano Riserva
    • 50 g breadcrumbs
    • 1 garlic clove
    • parsley
    • fresh basil 
    • 1 egg
    • extra virgin olive oil
    • salt & pepper


    STEP 1

    Cut the courgettes in half, parboil in salted water for about 10 minutes and scoop out the flesh with a melon baller or a spoon.

    STEP 2

    Mash the flesh of the courgettes with a fork. In a bowl, combine the flesh of the courgettes with breadcrumbs, grated Grana Padano Riserva, salt, pepper, 1 egg, garlic and chopped parsley and mix well. 

    STEP 3

    Stuff the courgettes with this filling, arrange the courgettes on a baking sheet lined with parchment paper and drizzle with olive oil.

    STEP 4

    Cook in a preheated oven at 180°C for 20-25 minutes, until the courgettes look well grated.

    STEP 5

    Serve the courgettes warm, garnished with basil leaves.
