    Marinated Courgettes, Hard-boiled Eggs and Grana Padano

    • 200 g courgettes,
    • 100 g Grana Padano,
    • 4 eggs,
    • 4 medium potatoes,
    • 1 lemon,
    • extra virgin olive oil,
    • salt,
    • pepper.



    STEP 1

    Peel the potatoes, cut into chunks and cook for 10 minutes in plenty of boiling salted water.

    STEP 2

    Prepare a dressing by whisking the olive oil with the lemon juice and a pinch of salt and pepper with a fork.

    STEP 3

    Boil the eggs for about 7 minutes so that they are hard-boiled with a soft yolk.


    STEP 4

    Julienne the courgettes and blanch for 1 minute in salted boiling water.

    STEP 5

    Drain the courgettes, arrange on a plate with the potatoes and hard-boiled eggs, cut in half, and drizzle with the dressing.
    Serve garnished with shaved petals of Grana Padano.
