    Chickpea Salad with Grana Padano

    Ingredients

    300 g precooked chickpeas,
    100 g Grana Padano shavings,
    1 head lamb’s lettuce,
    4 large red onions,
    150 g water,
    50 ml vinegar,
    3 tablespoons cane sugar,
    extra virgin olive oil,
    salt & pepper.

    Preparation

    STEP 1

    Thinly slice the onions and brown in a non-stick pan with a drizzle of extra virgin olive oil.

     

    STEP 2

    Mix water, vinegar and cane sugar in a bowl and pour into the pan with the onions, continuing to cook them on low for 10-15 minutes.

     

    STEP 3

    In a bowl, mix the lettuce with the chickpeas and cooled onions. Season with olive oil, salt, pepper and shavings of Grana Padano.
