Potato, peas, prosciutto and Grana Padano croquettes with courgette and mint green cream sauce
Ingredients500 g potatoes
200 g courgettes, sliced
100 g diced ham
100 g Grana Padano
1 garlic clove
1 sprig of mint
Extra virgin olive oil
Vegetable oil to fry
Salt & pepper
PreparationTo prepare the courgette and mint cream sauce, brown the courgette slices in a non-stick pan with a drizzle of olive oil and a clove of garlic. Season with salt and pepper, add a pinch of chilli powder and a few leaves of mint and parsley, and blitz in a blender until smooth and creamy.
Boil the potatoes in salted water, drain and mash them until smooth.
In a bowl, mix the mashed potatoes with the grated Grana Padano and egg and season with salt and pepper. Add the peas and diced ham and mix well.
With moist hands, make 3-4 cm balls, roll them in breadcrumbs and fry them in plenty of vegetable oil. Use a skimmer to remove the croquettes from the oil and put them on parchment paper, season with salt and pepper and serve with the courgette cream sauce.
