Courgette (zucchini) flowers stuffed with Grana Padano

Ingredients14 courgette/zucchini flowers
270 g ricotta
80 g Grana Padano
14 anchovies in oil
1 tbsp. breadcrumbs
Salt & pepper
PreparationPreheat oven at 180 °C.
In a bowl, mix the ricotta with the grated Grana Padano, breadcrumbs, pepper and a drizzle of olive oil.
Remove the pistils from the courgette flowers, wash them under running water and pat dry. With the help of a piping bag, fill each flower with the ricotta and Grana Padano mixture and top with an anchovy in oil, before closing them.
Arrange the stuffed flowers on a baking tray lined with parchment paper, season with olive oil and add a sprinkle of breadcrumbs and grated Grana Padano.
Bake for about 15-20 minutes until golden and serve them hot.
