Marinated Courgettes, Hard-boiled Eggs and Grana Padano
Ingredients200 g courgettes
100 g Grana Padano
4 medium potatoes
extra virgin olive oil
PreparationPeel the potatoes, cut into chunks and cook for 10 minutes in plenty of boiling salted water.
Prepare a dressing by whisking the olive oil with the lemon juice and a pinch of salt and pepper with a fork.
Boil the eggs for about 7 minutes so that they are hard-boiled with a soft yolk.
Julienne the courgettes and blanch for 1 minute in salted boiling water.
Drain the courgettes, arrange on a plate with the potatoes and hard-boiled eggs, cut in half, and drizzle with the dressing.
Serve garnished with shaved petals of Grana Padano.
