Pasta salad with grilled courgettes, anchovies, cherry tomatoes and pumpkin seeds, with Grana Padano
Ingredients320 g whole wheat penne
100 g Grana Padano
200 g cherry tomatoes
100 g fresh baby peas, shelled
50 g pumpkin seeds
5 anchovy fillets in oil
Extra virgin olive oil
Salt & pepper
PreparationBoil the pasta in plenty of salted water, drain when al dente and rinse under cold water to cool. Slice the courgettes with the mandoline and grill on a hot grill for a few minutes, then cut into thin strips.
In a bowl, place the tomatoes cut into wedges, the fresh baby peas, the chopped anchovy fillets, grilled courgettes, the pasta, basil leaves and shavings of Grana Padano. Mix well, season with salt and pepper and add a drizzle of olive oil.
Serve the pasta salad chilled.
