Buckweat Piadine with Grana Padano, bresaola, avocado and lamb lettuce
Ingredients120 g buckwheat flour
100 g Grana Padano
300 g egg whites (6 eggs)
150 g water
200 g bresaola
Extra virgin olive oil
Salt & pepper
PreparationIn a mixing bowl, combine flour, finely grated Grana Padano, salt and pepper, and the egg whites. Start mixing the ingredients with a whisk, add the water a bit at a time and continue whisking until the batter is smooth and lump free.
Heat a drizzle of olive oil in a non-stick pan, make the piadine using a ladle to pour the batter into the pan and cook them for a few minues on each side.
Fill the piadine with lamb lettuce, slices of avocado, bresaola, and Grana Padano shavings. Dress with lemon juice, a drizzle of olive oil and serve immediately.
