    Buckweat Piadine with Grana Padano, bresaola, avocado and lamb lettuce

    • 120 g buckwheat flour
    • 100 g Grana Padano
    • 300 g egg whites (6 eggs)
    • 150 g water
    • 200 g bresaola
    • 2 avocados
    • 2 lemons
    • Lamb lettuce
    • Extra virgin olive oil
    • Salt & pepper




    STEP 1

    In a mixing bowl, combine flour, finely grated Grana Padano, salt and pepper, and the egg whites.

    STEP 2

    tart mixing the ingredients with a whisk, add the water a bit at a time and continue whisking until the batter is smooth and lump free.
    Heat a drizzle of olive oil in a non-stick pan, make the piadine using a ladle to pour the batter into the pan and cook them for a few minues on each side.

    STEP 3

    Fill the piadine with lamb lettuce, slices of avocado, bresaola, and Grana Padano shavings. Dress with lemon juice, a drizzle of olive oil and serve immediately.
