    Veggie Burgers with Quinoa, Courgettes, Grana Padano PDO and Pumpkin Seeds

    • 200 g cooked quinoa
    • 100 g Grana Padano PDO
    • 3 courgettes
    • 1 egg
    • 1 boiled potato
    • 30 g pumpkin seeds
    • extra virgin olive oil
    • salt
    • pepper


    STEP 1

    Grate the courgettes and place them in a bowl; add the quinoa, grated Grana Padano, pumpkin seeds, one peeled boiled potato, an egg and a drizzle of extra virgin olive oil.

    STEP 2

    Stir together until the mixture is well-combined and soft. Shape into 4 burgers and fry in a skillet, with a drizzle of extra virgin olive oil, for 3-4 minutes on each side.

    STEP 3

    Serve the burgers hot with a side of fresh vegetables.
