    Non-alcoholic Elderflower Syrup White Spritz with Turnovers with Grana Padano

    • 1 roll shortcrust pastry
    • 250 g ricotta
    • 100 g Grana Padano
    • 50 g fresh peas shelled
    • 1 bunch marjoram
    • 1 egg
    • extra virgin olive oil
    • salt & pepper


    STEP 1

    In a bowl, mix the ricotta with grated Grana Padano, fresh peas, a drizzle of olive oil, chopped marjoram, salt and pepper.

    STEP 2

    Roll out the shortcrust pastry and, using a pastry ring, cut out circles measuring about 10 cm in diameter. Fill the dough circles with the ricotta and Grana Padano mixture, and fold in half to close; seal well. Arrange the turnovers on a baking sheet covered with parchment paper, brush with beaten egg yolk and bake in a preheated oven at 180 °C for 10-15 minutes.

    STEP 3

    Serve the turnovers hot with the Elderflower Syrup White Spritz.



    10 ml elderflower syrup
    30 ml tonic water
    20 ml sparkling water
    mint leaves


    Fill a glass with ice, tonic water, carbonated water and elderflower syrup. Stir and serve garnished with mint leaves.
