Preparation
Step 1
Bring plenty of salted water to the boil and cook the wholemeal pasta following the cooking times indicated on the package. Once ready, drain it al dente and cool it quickly under cold running water.
Step 2
Transfer the pasta to a large bowl and dress it with one tablespoon of extra virgin olive oil to prevent it from sticking while it cools.
Step 3
Wash the datterini tomatoes thoroughly and cut them in half. Rinse and dry the rocket.
Step 4
Cut the cooked ham into strips and the Grana Padano PDO into shavings or small cubes, depending on the consistency you prefer.
Step 5
Add the tomatoes, cooked ham, green olives and rocket to the pasta. Mix gently to distribute all the ingredients evenly.
Step 6
Add the Grana Padano PDO and finish with the sesame seeds. Season with the remaining extra virgin olive oil, salt and pepper to taste. Mix once more and leave to rest in the refrigerator for about 15 minutes before serving.
This tasty cold pasta salad is ideal for summer days, when you want a fresh and nutritious main dish without giving up on flavour. The contrast between the crunchiness of the rocket, the sweetness of the tomatoes and the bold taste of Grana Padano PDO makes this recipe perfect for a quick lunch, an office lunchbox or a light dinner to share with friends and family.
