Toasts with tomatoes, crispy pancetta, thyme and Grana Padano Riserva spread

Ingredients

12 slices homemade style bread
200 g Grana Padano Riserva
250 g grape tomatoes
250 g ricotta
80 g diced pancetta
1 bunch fresh thyme
extra virgin olive oil
salt
pepper

Preparation

Prepare the Grana Padano spread by whisking the ricotta then add the finely grated Grana Padano Riserva, thyme leaves, a pinch of salt, pepper and a drizzle of extra virgin olive oil. Mix well until smooth and creamy.
Toast the bread slices and top them with the warm Grana Padano Riserva spread.
Add the diced pancetta, sautéed in a frying pan, fresh grape tomatoes cut in half or in segments, garnish with sprigs of thyme and drizzle with extra virgin olive oil.
Serve immediately.
