Potato Gateau with Grana Padano Riserva, Ham and Peas
Ingredients500 g potatoes
150 g Grana Padano Riserva
150 g diced ham
150 g fresh peas
1 tablespoon breadcrumbs
Extra virgin olive oil
Salt and pepper to taste
PreparationPeel the potatoes and boil in plenty of salted water until soft.
Drain the potatoes and mash while still warm using a potato ricer, then transfer to a large bowl. Add the eggs, grated Grana Padano, ham, peas and a drizzle of olive oil and mix well, seasoning with salt and pepper to taste. Grease a baking tin with olive oil, dust with breadcrumbs and grated Grana Padano and pour in the mashed potato mixture, levelling it with a wet spoon. Bake in a preheated oven at 180 °C for 30-35 minutes.
Let the gateau cool for 5-10 minutes before serving.
