Fish skewers au gratin with Grana Padano, breadcrumbs, lime, and parsley
Ingredients1 sword fish stake
1 salmon stake
50 g Grana Padano
50 g breadcrumbs
1 sprig of parsley
Extra virgin olive oil
Salt & pepper
PreparationDice the sword fish and the salmon and prepare the skewers alternating the fish.
In a blender, mix the parsley, breadcrumbs, Grana Padano and a pinch of salt until fine and even.
Brush the fish skewers with oil and press them in the breading mix making sure it sticks as much as possible. Arrange the breaded skewers on a baking tray lined with baking paper and bake in a preheated oven at 200 °C for 10-15 minutes, turning them over halfway through.
Serve the skewers warm, garnished with lime and fresh parsley.
