    Quiche with asparagus and Grana Padano

    1 roll of rectangular puff pastry
    100 g Grana Padano
    1 bunch asparagus
    250 g cow ricotta cheese
    100 ml fresh cream
    2 eggs
    Extra virgin olive oil


    STEP 1

    Clean the asparagus and remove the hard woody part, boil for a few minutes and set aside.
    In a bowl, combine the ricotta, grated Grana Padano, eggs, chopped basil and cream. Use a whisk to mix until the ingredients are evenly combined. Season with salt and pepper.

    STEP 2

    Grease a rectangular baking tray and cover it with the unrolled sheet of pastry. Prick with a fork and cover with the asparagus. Add the egg and Grana Padano mixture and level the surface. Sprinkle more Grana Padano on top and bake in a preheated oven at 200 °C for 30 minutes. Allow to cool and slice.
