    Baked cod fillet in a crust of Grana Padano Riserva, almonds, breadcrumbs and herbs

    • 4 cod fillets
    • 50 g Grana Padano Riserva
    • 100 g bread crumbs
    • 30 g almonds
    • 1 bunch chives
    • extra virgin olive oil
    • salt
    • pepper


    STEP 1

    In a mixer, combine the almonds, breadcrumbs, chives, chunks of Grana Padano Riserva, a tablespoon of extra virgin olive oil, a pinch of salt and pepper and blend everything together for a few seconds on high speed, to chop coarsely.

    STEP 2

    Spread the cod fillets with this mixture and bake in a preheated oven at 180°C for 15 minutes, until golden.

    STEP 3

    Serve the fillets warm with fresh vegetables.
