In a mixer, combine the almonds, breadcrumbs, chives, chunks of Grana Padano Riserva, a tablespoon of extra virgin olive oil, a pinch of salt and pepper and blend everything together for a few seconds on high speed, to chop coarsely.
Spread the cod fillets with this mixture and bake in a preheated oven at 180°C for 15 minutes, until golden.
Serve the fillets warm with fresh vegetables.
