Friselle with Grana Padano, pears, almonds and honey

2 wholemeal friselle
1 pear
50 g Grana Padano PDO, flakes
20 g almonds, coarsely chopped
1 teaspoon honey (you can use acacia or millefiori honey)
Fresh mint leaves to taste
A drizzle of extra virgin olive oil (optional)

Preparation
STEP 1
If the friselle are not already crispy, soak them lightly under running water or dip them briefly in a bowl with a little water so that they become soft but not too soft. If you prefer a crispier texture, you can lightly toast them in the oven.
STEP 2
Wash and peel the pear, then cut it into thin slices. If you want to prevent the pear from oxidising, you can spray it with a little lemon juice.
STEP 3
Spread the pear slices evenly over the friselle.
Add the Grana Padano PDO flakes on top of the fruit.
Sprinkle chopped almonds over the pears and cheese for a crunchy touch.
Sprinkle a teaspoon of honey on top of each friselle to add a sweet contrast.
STEP 4
Garnish with fresh mint leaves and, if desired, add a drizzle of extra virgin olive oil for an extra touch of freshness.
This combination of the sweetness of the pear, the freshness of the mint, the crunchiness of the almonds and the intense flavour of Grana Padano PDO makes these friselle a tasty and refined dish. Enjoy!
