    Green bean omelette rolls with ham and Grana Padano

    • 4 eggs
    • 200g green beans
    • 100 g Grana Padano
    • 100 g ham
    • Cherry tomatoes
    • Basil
    • Extra virgin olive oil
    • Salt


    STEP 1

    With the help of a knife, remove the ends of the green beans, then cook in boiling water for 5 minutes, drain and when they have cooled, cut them into small disks. Then sauté them in a pan with a drizzle of olive oil. Beat the eggs in a bowl, adding a pinch of salt. Add in half the grated Grana Padano, the beans and stir well.

    STEP 2

    Heat a drizzle of olive oil in a large non-stick pan, add the egg and vegetable mixture and cook for a few minutes on each side. Transfer the omelette to a sheet of parchment paper, sprinkle with the grated Grana Padano and the slices of ham and roll up the omelette. 

    STEP 3

    Wrap the roll in the parchment paper, candy-style. Chill in the refrigerator for 30 minutes. Cut the omelette into slices and serve immediately with cherry tomatoes and fresh basil.
