800 g beef sirloin
extra virgin olive oil
salt
50 g baby spinach
For the fondue:
250 g Grana Padano
280 g fresh cream
Pepper

Preparation
STEP 1
Remove any excessive fat or stringy parts from the meat and tie it with cooking string. Brush the meat with extra virgin olive oil and place it in an oven dish.
STEP 2
Bake in a preheated oven at 250 °C for 25 minutes turning it over from time to time.
Leave to stand and then cut into thin slices.
STEP 3
To make the fondue, in a small saucepan heat the fresh cream on medium heat and add the grated Grana Padano. Stir well and add pepper to taste. Set aside.
STEP 4
Place a few slices of roast beef on a plate with a few baby spinach leaves. Garnish with the Grana Padano fondue, a drizzle of oil, and pinch of pepper.
