    Grana Padano and nut crusted roast turkey breast

    • 600 g turkey breast
    • 50 g Grana Padano PDO
    • 50 g shelled pistachios
    • 50 g almonds
    • 20 g butter
    • 1 bunch sage
    • 1 egg white
    • Salt and pepper to taste



    STEP 1

    In a saucepan, melt the butter with a few leaves of sage and sear the turkey breast all over to seal the meat. Once seared, leave the roast turkey to cool on a tray covered in parchment paper.

    STEP 2

    Roughly chop the pistachios and almonds. Lightly beat the egg white in a bowl, add the chopped nuts and grated Grana Padano and mix well. Cover the roast turkey with the mixture, close the parchment paper, wrapping it closely around the meat and cook in a preheated oven at 200°C for 25-35 minutes.

    STEP 3

    When cooked, remove the roast from the oven and leave to cool. Serve garnished with pistachios and a sprinkle of ground pepper.
