    Chickpea Spinach Balls with Grana Padano Riserva

    Ingredients

    250 g chickpeas, drained
    200 g fresh spinach
    1 egg
    80 g Grana Padano Riserva
    1 garlic clove
    1 bunch parsley
    breadcrumbs
    salt and pepper
    extra virgin olive oil

    Preparation

    STEP 1

    Sauté the spinach in a pan with garlic and a little olive oil.

    STEP 2

    In a bowl, combine the chickpeas, an egg, the cooked spinach, grated Grana Padano Riserva and blend everything together using an immersion hand blender until the mixture is soft. Add enough  breadcrumbs to achieve a soft consistency; season with salt and pepper.

    STEP 3

    Form into balls measuring about 3cm in diameter, roll the balls in breadcrumbs and place on a baking sheet lined with baking paper.

    STEP 4

    Drizzle with olive oil and bake in a preheated oven at 200°C for 20-25 minutes, until golden. Serve hot.
