    Salad with lamb’s lettuce, apricots, cashews, blueberries, mint and shavings of Grana Padano

    • 150 g lamb’s lettuce,
    • 100 g Grana Padano PDO in shavings,
    • 8 apricots,
    • 50 g salted cashews,
    • 100 g blueberries,
    • 1 bunch fresh mint,
    • 3 tablespoons extra virgin olive oil,
    • 1 pinch salt,
    • ground black pepper.


    STEP 1

    Wash and dry the salad and place it in a large bowl.

    STEP 2

    Add the apricots, cut in quarters, the blueberries, mint leaves, cashews and shavings of Grana Padano.

    STEP 3

    Dress with extra virgin olive oil and mix, season with salt and serve with freshly ground black pepper, garnishing with shavings of Grana Padano.
