    Cold Curried Soup with Chicken, Courgettes, Potatoes, Carrots, Cherry Tomatoes and Grana Padano PDO

    Ingredients

    400 g chicken breasts
    3 courgettes
    150 g Grana Padano PDO
    200 g cherry tomatoes
    1 teaspoon curry
    1 bunch mint
    2 potatoes
    800 ml vegetable stock
    1 shallot
    extra virgin olive oil
    salt
    pepper

    Preparation

    STEP 1

    Sauté the chopped shallot in a pan with the cubed potatoes, chicken cut into strips and julienned courgettes.
    Add the broth and the curry and bring to a boil, stirring well; cook over medium heat for 20-30 minutes.

    STEP 2

    When cooked, add the halved cherry tomatoes and grated Grana Padano, stirring well; season with salt and pepper.

    STEP 3

    Serve the soup cold, garnished with mint leaves and shavings of Grana Padano.
