    Toasts with tomatoes, crispy pancetta, thyme and Grana Padano Riserva spread

    Ingredients

    12 slices homemade style bread
    200 g Grana Padano Riserva
    250 g grape tomatoes
    250 g ricotta
    80 g diced pancetta
    1 bunch fresh thyme
    extra virgin olive oil
    salt
    pepper

    Preparation

    STEP 1

    Prepare the Grana Padano spread by whisking the ricotta then add the finely grated Grana Padano Riserva, thyme leaves, a pinch of salt, pepper and a drizzle of extra virgin olive oil. Mix well until smooth and creamy. Toast the bread slices and top them with the warm Grana Padano Riserva spread.

    STEP 2

    Add the diced pancetta, sautéed in a frying pan, fresh grape tomatoes cut in half or in segments, garnish with sprigs of thyme and drizzle with extra virgin olive oil. Serve immediately.
