Grana Padano crisps are an original and tempting way to turn a simple aperitivo into a special moment. Ingredients
Grana Padano PDO, grated, 200 g
Thinly sliced cured ham, 120 g
Sun-dried tomatoes in oil, 8–10
Freshly ground black pepper, to taste
Basil leaves, to taste

Method
Step 1
Heat a non-stick pan over a medium heat. Scatter about 25 g of grated Grana Padano PDO to form a disc roughly 10–12 cm in diameter.
Step 2
Leave to cook for 2–3 minutes, until the cheese has completely melted and starts to turn golden at the edges.
Step 3
Using a spatula, gently lift the crisp and transfer it to a plate, or over an upturned small bowl if you’d like to give it a slightly curved shape. Leave it to cool completely.
Step 4
Repeat the process until you’ve used up all the cheese.
Step 5
Top each crisp with a slice of cured ham and a sun-dried tomato and, if you like, finish with a few fresh basil leaves.
Hugo spritz
Ingredients
Well-chilled Prosecco, 300 ml
Elderflower cordial, 160 ml
Soda or sparkling water, 160 ml
Fresh mint leaves, 16
Lime, 1
Ice, to taste
Method
Step 1
Fill four glasses with plenty of ice. To each one, add the elderflower cordial, a few slices of lime and some mint leaves, lightly rubbing the leaves between your hands to release their fragrance.
Step 2
Pour in the well-chilled Prosecco, top up with the soda or sparkling water and stir gently. Serve at once, alongside the Grana Padano crisps.
This starter of Grana Padano crisps is perfect for serving with a Hugo Spritz during a terrace aperitivo, a buffet or an informal dinner.
