Ingredients
Chicken breast, 600g
Ripe avocado, 1
Grana Padano PDO, 80g
Mixed salad leaves, 150g
Organic lime, 1
Cherry tomatoes, 10
Cucumber, 1
Extra virgin olive oil, 2 tbsp
Salt, to taste
Black pepper, to taste
Sesame seeds, to taste

Method
Step 1
Slice the chicken breast into strips and season with a drizzle of olive oil, salt and pepper. Cook in a hot frying pan for around 8 to 10 minutes until evenly golden, keeping the chicken tender and juicy.
Step 2
Wash the mixed salad leaves, cherry tomatoes and cucumber thoroughly. Cut the cherry tomatoes in half and slice the cucumber into thin rounds.
Step 3
Halve the avocado, remove the stone and slice the flesh. Drizzle immediately with lime juice to prevent browning and add a fresh citrus note to the dish.
Step 4
Arrange the mixed salad leaves in a large bowl and add the cherry tomatoes, cucumber and avocado. Add the chicken while still warm.
Step 5
Finish with shavings of Grana Padano PDO, a little grated lime zest, sesame seeds and a drizzle of extra virgin olive oil. Serve immediately.
