In this version, we pair them with a true classic of mixology, the vodka martini, creating an interesting meeting point between food and aperitif culture.

Method
Step 1
Wash the wild asparagus, trim off the tougher ends and cut into small pieces.
Step 2
Blanch the asparagus in lightly salted water for 3–4 minutes, then drain and leave to cool.
Step 3
In a bowl, whisk the eggs with the milk (or sparkling water). Add the sifted flour and instant yeast, mixing until you have a smooth batter.
Step 4
Add the chopped asparagus, grated Grana Padano PDO, salt and pepper. Mix well to evenly combine the ingredients.
Step 5
Heat plenty of vegetable oil in a frying pan and drop spoonfuls of the mixture into the oil. Fry until the fritters are golden and crisp.
Step 6
Drain on kitchen paper and serve hot.
Vodka martini
Ingredients

Vodka, 6 cl
Vermouth dry, 1 cl
Ghiaccio q.b.
Olive verdi denocciolate q.b.
Scorza di limone q.b.
Method
Step 1
Fill a mixing glass with ice and add the vodka and dry vermouth.
Step 2
Stir gently with a bar spoon to chill and lightly dilute the cocktail.
Step 3
Strain into a well-chilled martini glass without ice. Garnish with a pitted green olive or a twist of lemon peel.
