Crostini with ricotta and Grana Padano cheese cream, grilled peaches, honey, mint and pistachio granules

4 fette di pane
150 g Grana Padano DOP da grattugiare
50 g Grana Padano DOP per i petali
2 pesche
200 g ricotta vaccina
olio evo
miele millefiori qb
1 rametto di menta
granella di pistacchi qb
pepe

Come preparare i crostini
STEP 1
Mondate le pesche e ricavate da ognuna 6 spicchi. Fatele grigliare per qualche minuto da entrambi i lati e poi tenete da parte. Fate abbrustolire anche le fette di pane.
STEP 2
In una ciotola lavorate la ricotta con il Grana Padano DOP grattugiato, la menta tritata ed un filo d’olio evo fino ad ottenere una crema omogenea.
Impiattamento
Disponete una cucchiaiata di crema sui crostini e poi adagiate le pesche grigliate. Guarnite con un filo di miele, i petali di Grana Padano DOP, la granella di pistacchio ed un pizzico di pepe
