    Ingredients

    2 heads of radicchio
    2 fennel bulbs
    1 pomegranate
    200g Grana Padano DOP
    Extra Virgin Olive Oil (EVOO) to taste
    Salt to taste
    Pepper to taste

    Preparation

    STEP 1

    Start preparing your mixed winter salad by thoroughly cleaning the radicchio and fennel. Then, cut the radicchio into thin strips and slice the fennel thinly (using a mandoline is recommended) to get delicate and uniform slices. Transfer the vegetables to a large bowl, ready for dressing.

    STEP 2

    Carefully remove the seeds from the pomegranate, setting half the seeds aside for the final decoration, and using the other half to extract the juice. The pomegranate juice will add a sweet and slightly acidic touch, perfect for balancing the bitterness of the radicchio.

    STEP 3

    In a small bowl, combine the pomegranate juice with 4 tablespoons of extra virgin olive oil, a pinch of salt, and freshly ground black pepper to taste. Emulsify well until you get a creamy and slightly thick consistency, then use it to dress the salad.

    STEP 4

    Add the remaining pomegranate seeds and finish with generous shavings of Grana Padano DOP. Mix gently and serve your tempting winter salad immediately!
