    Grana Padano PDO & pepe spaghetti

    • 500 g Spaghetti
    • 2 tablespoons freshly ground black pepper
    • 3 tablespoons extra virgin olive oil
    • 80 g butter
    • 125 g grated Grana Padano PDO and extra to serve
    • salt


    STEP 1

    Bring a large pot of water to a boil. Salt the boiling water and add the pasta. Cook until just al dente. Just before draining the pasta, scoop out 1 & 1/2 cups of starchy water and set aside.


    STEP 2

    While pasta is cooking, add oil and cracked pepper to a large frypan and toast for 3 minutes on medium heat.

    STEP 3

    Add 1 cup of pasta water and butter to the pan and then add cooked pasta. Toss pasta until the sauce thickens slightly.

    STEP 4

    Remove frypan from heat and slowly add the Grana Padano PDO, stirring until the cheese melts and the sauce coats the pasta (add more pasta water if sauce seems dry).
    Twist the pasta into large swirls and divide among bowls.
    Top with extra Grana Padano PDO.
