This isn’t traditional at all but that doesn’t mean it shouldn’t work, am I right?! Combining the cheese course with dessert sounds a little bonkers but somehow makes sense. This Grana Padano PDO ice cream isn’t as cheesy or strong as you might think, and the pairing with the sharp and sweet red wine cherries really helps to cut through it to deliver a flavourful and balanced recipe. If you are a cheese lover AND a gelato eater, I strongly recommend you give this a go. You will not be disappointed!
Ingredients
500 ml double cream
100 gr brown sugar
100 gr grated Grana Padano PDO
20 gr chopped pistachios
Olive oil to drizzle
Basil leaves to garnish
For the cherries:
250 gr cherries
200 ml good red wine
40 gr sugar
1 cinnamon stick
3 cloves

STEP 1
Get the gelato going well ahead of time, as it needs about 4 hours to set well in the freezer. Bring the cream and sugar to a simmer, then remove from the stove and add the grated Grana Padano PDO. Mix and let the remaining heat melt the cheese (you can blitz it or pass it through a fine sieve for a smoother finish). Let it cool and churn the mixture in an ice cream machine or, alternatively, place the mix in the freezer and mix it well every hour until thick and frozen.
STEP 2
Halve the cherries and destone them with patience. In a pan, add the wine, sugar and aromatics and bring to a simmer. Reduce by one third over low heat, then add the cherries and remove from the stove. Mix well and let the cherries infuse in the remaining heat of the wine until cold.
STEP 3
I suggest placing the serving glasses or bowls in the freezer for 1 hour before serving. Scoop the ice cream into the bowls, top with the cherries along with a spoonful of the sweet wine reduction, sprinkle over a few chopped pistachios and drizzle with a little olive oil. Optionally, garnish with basil leaves and enjoy.
