Tomato gazpacho with Grana Padano croutons

Fresh, colourful and packed with flavour, Spanish gazpacho is one of the defining dishes of the Mediterranean summer. Born as a simple, rustic peasant dish, it’s now loved the world over for the way it makes the most of seasonal vegetables. The original gazpacho recipe calls for ripe tomatoes, cucumber, peppers and bread, blended into a velvety, refreshing chilled soup. To add a crunchy, even more delicious touch, we suggest serving it with croutons enriched with the unmistakable flavour of Grana Padano PDO.
Ingredients
For the gazpacho:
Ripe tomatoes, 1kg
Large cucumber, 1
Red pepper, 1
Red onion, ½
Garlic (optional), 1 clove
Stale bread, 80g
Extra virgin olive oil, 4 tbsp
White wine vinegar, 2 tbsp
Cold water, 200ml
Salt, to taste
Pepper, to taste
For the croutons:
Rustic bread or baguette, 150g
Extra virgin olive oil, 4 tbsp
Grana Padano PDO, grated or shaved, 80–100g
Salt, to taste
Black pepper, to taste
Oregano or thyme (optional)

Method
Step 1
Wash the tomatoes, cucumber and pepper thoroughly. Deseed the pepper and roughly chop all the vegetables.
Step 2
Transfer the vegetables to a large bowl along with the onion, the garlic (if using) and the stale bread, torn into pieces. Add the vinegar and leave to rest for around 10 minutes.
Step 3
Tip everything into a blender. Add the extra virgin olive oil, salt, pepper and cold water.
Step 4
Blend until smooth and creamy. If needed, add a little more water to adjust the consistency.
Step 5
Transfer the gazpacho to the fridge and chill for at least 1 hour before serving.
Step 6
Meanwhile, prepare the croutons. Cut the bread into cubes and arrange on a baking tray lined with baking paper.
Step 7
Drizzle the bread with extra virgin olive oil and season with salt, pepper and, if you like, oregano or thyme. Sprinkle the grated Grana Padano PDO evenly over the croutons.
Step 8
Bake in a preheated oven at 180°C for around 10–12 minutes, until the croutons are golden and crisp.
Step 9
Serve the gazpacho well chilled, accompanied by the freshly made Grana Padano PDO croutons.
