Ingredients
Courgettes, 500g
Ricotta, 250g
Grated Grana Padano PDO, 80g
Breadcrumbs, 120g
Eggs, 2
Chopped parsley, to taste
Extra virgin olive oil, 3 tbsp
Salt, to taste
Black pepper, to taste

Method
Step 1
Grate the courgettes using a coarse grater, then squeeze them well to remove any excess water.
Step 2
In a bowl, combine the courgettes, ricotta, Grana Padano PDO, eggs, parsley, salt and pepper. Add the breadcrumbs gradually until the mixture becomes firm enough to hold together.
Step 3
Shape the mixture into fritters roughly the size of a walnut and gently flatten them with your hands.
Step 4
Heat the extra virgin olive oil in a non-stick frying pan and cook the fritters for around 4 to 5 minutes on each side, until golden brown.
Step 5
Serve the fritters hot with a fresh salad or a light yoghurt sauce.
