Ingredients
Arborio rice, 320g
Vegetable stock, 1 litre
Tomato passata, 200g
Grana Padano PDO, finely grated, 80g
Mozzarella, 150g
Eggs, 2
Breadcrumbs, as needed
Onion, 1
Extra virgin olive oil, to taste
Sunflower oil, for frying
Salt, to taste

Preparation
Step 1
Gently fry the finely chopped onion in a drizzle of olive oil, then add the rice and toast for a few minutes.
Step 2
Add the tomato passata and begin cooking, adding the stock one ladle at a time and stirring until fully absorbed.
Step 3
Once cooked, stir through the grated Grana Padano PDO, then spread the rice out on a tray and leave to cool completely.
Step 4
Shape the cooled rice into balls, pressing a small cube of mozzarella into the centre of each one. Dip each supplì first in beaten egg, then roll in breadcrumbs until evenly coated.
Step 5
Fry in hot oil until golden all over, then drain on kitchen paper and serve straight away while still hot.
Paloma cocktail
Ingredients
Tequila, 160ml
Fresh lime juice, 40ml
Grapefruit soda, 400ml
Fine salt, to taste
Ice, as needed
Preparation
Step 1
Run a little fine salt around the rim of each glass, then fill with ice.
Step 2
Pour in the tequila and lime juice.
Step 3
Top up with grapefruit soda and stir gently to combine.
Step 4
Garnish with a slice of lime if you like, and serve immediately.
